Quinoa Muffins
...Quinoa (pronounced Keenwa) was one of the 3 staple foods of the Inca Empire
and was considered sacred. It is the highest in protein content
of all the world's grains yet cooks up light and fluffy and delicious!





Yield: 1 Dozen

1 cup whole wheat flour
1/2 cup rice flour
1/4 cup powdered milk
2 tsp. baking powder
3/4 tsp. sea salt
1/4 safflower oil
3 TBS. barley malt
1 cup warm water
1 egg, beaten
1 cup cooked quinoa or brown rice

Preheat oven to 400 degrees.

In a large mixing bowl combine flours, powdered milk, baking powder and salt. Set aside.

In another bowl, combine oil,barley malt, water, egg and quinoa. Mix well.

Using a wire whisk, quickly stir wet ingredients into dry ingredients. DO NOT OVERMIX

Spoon into well-oiled muffin pan and bake for 20 minutes.
